Yes, you will need to adjust the amount of water that you use in your recipes, CJ. Your starter has half as much water in it as a liquid starter (which is what most sourdough recipes will call for) and so you'll want to add this missing water into the dough otherwise your dough will be to stiff and you'll begin to loose those larger holes and the chew you might be expecting.
