I’m fighting discouragement on this sourdough journey…I too experienced the same sticky blob of dough. It had doubled overnight and couldn’t hardly shape enough ti get into the banneton baskets. I do believe the bulk fermentation is where I’m having the issue. My two blobs are in the fridge right now and am praying I get some semblance of a loaf. I will definitely try again taking these things into consideration.
