Hi Seth! Thanks for reaching out. We always recommend checking in with and following any manufacturer instructions or guidelines when it comes to preheating baking vessels empty. You are correct in that not all types of materials or pans are suited for this method of baking. You may be interested in our Cold Dutch Oven method of baking breads if the pan you are using can not be preheated empty but can be used in the oven.
