After trying (and failing at) several sourdough recipes, this one is GOLD! fits my schedule and skill level perfectly. It's been my go-to loaf for 5 years now, however, I've never attempted add-in such as dried cranberries, etc.
In reading Martin's notes, I see that up to 200g are acceptable, but my question is in the process!
If I add inclusions, when do I add these to the dough? after the last 15 min fold?
Thanks for being such a remarkable resource for bakers of all skill levels!
