I mad this yesterday. I love this recipe because it seems so relaxed about the starter! I also thought it would be relaxed about the shaping time, so I slept a little later this morning, but then I saw my bread dough had risen so much overnight that it spilled out of the container( which I guess was too small) onto the countertop. Yikes! When I tried to shape the dough for the bannetons, it was too sticky to shape, so I gave up and threw them into the bannetons as they were. I notice that they are still rising in the fridge, so maybe the dough wasn’t over risen as I thought. Anyway, I’ll see tonight when I go to bake them. I decided to try another batch, and I’ve just started that. I’ll put this one in the right size container and see how that goes.
