Hi Ann! I would recommend adding up to 50g of olive oil and 1 tablespoon of rosemary to this recipe. The olive oil can be added towards the end of the initial mix once the dough has completely come together. The rosemary can be folded in starting on the second fold. This way, the dough will be less hindered by the inclusions interrupting the gluten network as it is trying to form. Happy baking!
