I’ve found the same problem living in FL: a warm kitchen. I do the overnight proofing only in the winter if we have cooler temps. In the summer I make it in the morning, at 11 a.m. and by 6p.m. It had doubled and is ready to shape.
I had not thought of using less starter for an overnight raise in a too warm kitchen. Thank you.
