Hi Nicole. It would be fine to use this recipe as your first try at sourdough once the starter is active. If your interested, our beginner recipe we typically recommend is the Rustic Sourdough Bread Recipe. If you do not have a bannetton, you can use a bowl lined with a towel and dusted with flour. We have not tested the recipe in a pullman loaf pan, we guess that size of a pan would take a 3/4 of this recipe to fill. If baking regularly (3-4 times per week) with your starter, it would be best to keep it at room temperature and feed it 1-2 times per day. Happy Baking!
