Hi Ruthie. We think this recipe should be ok to fit in your  7.5 quart le creases but it is not something we have tested. It would be best to evaluate the fit of the dough when placed in the dutch oven after shaping. If you feel there would be enough room for the dough to become more than double its size, we would give it a try.
