Hi Ron! In the video, Martin uses a combo cooker and an oval cloche but you're welcome to use a preheated stone of baking steel. The baking time and temperature will be the same. You'll want to double check with the manufacuter that the griddle is suitable for use in the oven. If you don't have a lidded baking vessel, you'll want to add steam to the oven though.
