I made this bread yesterday and was a little skeptical about the starter not being fed for a few days and straight out of the fridge, but I wanted to try. The dough was really sticky and a challenge for a novice bread baker, but I persevered. After the last rise in the fridge the dough didn’t look great...it was dense and not light and puffy like the recipe says it would be, so I left it out on the counter hoping for more of a rise. I eventually got them into the Dutch oven and baked up....l can’t believe how great it turned out! The crumb is not as open as I’d like it to be but it’s not tight either and the flavour is amazing! Beautiful crunchy, chewy crust! Thank you Maura and Martin I will be making this one again and again 😊 I would have liked to post pics but there is no pic button here.
