I love the taste of mostly-white sourdough, but I find it doesn't keep me full enough! My percentages are 70% whole wheat, 10% whole rye, 20% KAF bread flour--for sure as you say it's denser, but soooo good. Last bake I swapped 10% of the whole wheat for 10% ground corn and added some molasses as I'd just seen Martin's Anadama video and that was super delicious.
