Hi Kathryn, I tried a nearly 100% whole grain loaf with minor success. I stopped bulk @ 7 hrs & that might have been too long. Shaped ok, and coming out of fridge loaf seemed nice, but no oven spring. Soft crumb, good flavor, but.....
Have you had these problems? Solutions?
