I just wanted to update my previous comment. I now use this method with most of my wheat bread recipes. My latest success was 70% whole wheat with 120 g of flax and Chia seeds added. Wonderful and delicious loaves with nice crumb! I agree with others that you need to get a feel for how the should look and feel at each stage. Thanks so much to Maura and King Arthur for saving me so much time!
