Hi John! Baking the bread in a Dutch oven helps trap steam, making for a nice thin and crispy crust and it also helps to provide support for the dough, encouraging it to rise upwards rather than spreading outwards. You're welcome to try baking the bread on a baking sheet or stone, but it may result in a flatter loaf. Happy baking!
