We're glad to hear that you've been enjoying this recipe, Sterling! We wonder if your dough is getting over-proofed. Over-proofed dough is often very slack and sticky and will also make for a dense loaf. We'd suggest shortening up your room temperature rises when it's warmer out as this will speed up the rate at which your dough ferments. Increasing the amount of time the dough is in the fridge, will help create a more sour flavor. We hope this helps and happy baking!
