Hi, Julia! You're correct: there's one overnight rise at room temperature, then in the morning you'll shape and let the dough rise for another 8-12 hours in the fridge, and then they'll be ready to bake in the evening once you're done with work. So the entire process is around 24 hours. Hope this helps!
