I have a question about making this bread a regular part of my weekly routine. If I keep a 100g starter in my fridge, can I take 40g of it two times to make this recipe and then feed a 10g seed one time a week? If I do this, how long should I wait after feeding before using 40g of it again? I'm just wondering about the health of the starter long-term. Is it good to occasionally keep it out of the fridge and feed it every 12-24 hours to increase the vigor or is that unnecessary? Thanks!
