hi, love this recipe! I've had great success following it, but now I'm trying to increase my whole-wheat to all-purpose flour ratio, and my last two loaves have been much denser and flatter. I made them one loaf at a time, with
300g whole-wheat flour
150g all-purpose flour
10 g salt
50 g discard starter
385 g water

I would please like your advice on how to adapt it to get that same great rise and crumb. thank you!
