Hi Bob - Maybe this comment is way too late and you've figured it out, but I always bake in this bread in the morning after the overnight cold proof in the fridge (using Martin's tweaks), and I bake the loaves cold, straight out of the fridge. It makes scoring easy! I score my loaves right before they go into the preheated Dutch oven and mist them with filtered water before placing the lid on the dutch oven. I get huge oven spring - they don't seem to require any proofing on the counter in the morning at all. As long as my dough almost doubled the day before during the counter bulk ferment, they are good to go straight from the fridge.
