With so many people saying that they are ending up with floppy messes are you sure they aren’t over proofing? Seems like 12 hours at room temperature is asking for it. Or is it because you’re starting with a relatively small amount of starter the bulk fermentation will take longer and is fine for such a long time at warmer temperatures?
