Hi Ivette,

Determining when to bake on day two will require some learning and testing. Depending on the activity of your starter and how much the loaves rise overnight, you'll either load immediately or wait for an hour or so. If the loaves feel firm but puffy underneath, they are ready. As I note, the relationship may take some time to develop!
