Joanne, Ive been having a similar issue with this long bulk. It seems to rise nicely for the first 8 hours or so, and then tapers off. Is it overproofed it I go the full 12 hours at that point? Also, experiencing really difficult, sticky dough. really tasty, but not rising fully in the oven.
