Thank you for sharing this! I made it last night and was grateful for the modifications for the colder houses. My house is usually 60F in the winter so I let mine sit overnight inside the oven which had been prewarmed to 80F with the lightbulb. I turned off the lightbulb when I went to bed. The temperature dropped to 65 overnight but the dough more than doubled in size. I shaped them, let them rest on the porch since it was cold enough outside, and baked them in the evening. They came out really well.
