Martin, I’m enjoying your family Baking videos, almost makes me feel like I’m back at KAF for a baking class. I usually try to push as much whole grain as possible so did recipe with 25% super 10 blend for first attempt. I used 80g starter last fed a week ago. I have many whole grain blends from KAF in freezer I need to start using but several gluten free blends ( like ancient grains). Guessing best not to go above 25% with one of those flours. I might try it with a soaker next time.
