I agree on highlighting the small loaf. I'm new hoppin' on the sourdough bread train. I've been making the smaller loaf....30 gr starter, 210 gr water, 300 gr flour...it has been a great way to introduce me to sourdough baking without the fear of wasting my flour. Grateful for the miracle of bread and water! Blessings!
