I followed your recipe exactly (750gr AP, 250 gr WW, 750 Gr water).
12 hours later rose to double on my counter.
This is when it went astray. The dough was very sloppy and almost impossible to shape. I got them into towel lined bowls in fridge but not optimistic. Any recommendation to make dough less sloppy.
