I’d appreciate a clarification on the directions, please.
After the first round of folding the dough the instructions say “Wait (15 minutes) and fold the dough two more times.” Does “two more times” mean “wait 15 minutes, then pull up and fold the dough on all four sides” and repeat that all those steps again - twice - over the course of 30 minutes?
I initially understood the directions to mean “pull up and fold the dough on four sides, wait 15 minutes and pull up and fold on two sides,” then move to next step. My dough has been wetter and more sticky than I am used to, and it spreads more than other recipes. The result is tasty but looks more like focaccia. I’m wondering if I’ve misunderstood the pull and fold instruction. If so, could that be part of the issue with the sticky ness and flat end result...?
