Thanks for making this video!
I followed the recipe and made the dough last night. This morning it was definitely doubled in size. The problem that I had was that the dough was hard to work with this morning. I tried adding the tension to each piece and shaping it, but the dough flattens out and doesn't really stay put. They are in bowls in the fridge right now. I'm wondering if there was something that I could have done to prevent the dough from flattening and being so tricky to work with.
