It sounds like you may have very warm conditions, Caryn! If you used 100 grams of starter, reduce to 40 grams and keep the dough in a cool place and watch it. When it's doubled in size you may divide. Also, keep your eyes peeled for a video we just made about this process--it's scheduled to appear on our Facebook page on 4/15/20. All the best to you!
