Hi Sharon! Has your starter been pretty active? We'd like to see it doubling in size in 8 hours or so. If it has low activity, loaves may be flat. The other things to consider might be dough temperature--we'd like to see your dough in the 76 F range after mixing. If you're still stumped, please call our baker's hotline! 855-371-2253.
