Hey Keith,

That will be a pretty big loaf--I like the way you think! After the load I would lower the oven as directed and watch that it doesn't develop too much color, adding time as necessary. Are you thinking that you'll bake it on a stone? That would be a pretty big Dutch oven! Happy Baking!
