So, I'm curious how you would modify the timing of this recipe if you didn't want to refrigerate it... Timeline:
- Mix starter, flour & water.
- “Kneading” process - 1 hour in 15 min segments
- 12 hour rise (overnight)
- Shape into loaves
(and this is where I’m wondering how long I could just leave out on my counter - recipe calls for refrigerating at this stage for 8-12 hours)
