This seems like an excellent way to use starter whenever you feel like baking, rather than remembering to plan an extra couple of feeds. And since flour is in such short supply these days, I've been maintaining only a 60 gm starter in the fridge. So by baking a single loaf, I can use that, have enough to feed and put back, and get to baking! Thanks so much. (Also - just a suggestion - since flour is so short lately, maybe a good time to highlight the Smaller Sourdough Starter blog/recipe - I found it very useful!) Looking forward to trying this soon. (And also - thoroughly enjoying the videos with Martin baking with his kids!)
