Is it necessary to use whole grain flour for part of the flour? I have dietary issues and can't eat whole grains. I've always used either all bread flour or all purpose flour for my sourdough bread using the KA Rustic Sourdough recipe without an issue, although my loaves never look like these! I'd like to try Maura's way and am curious if the flour makes a huge difference. Thanks!
