Hi Susan, if you're referring to our recipe for The Almost-No-Knead Baguette, which calls for instant yeast, then yes, because active-dry and instant yeast are interchangeable. If you're making a recipe that isn't ours, you're welcome to experiment. Rapid-rise yeast is unique and should only be used in recipes specifically calling for it, so using a yeast that's different from that and will perform much more slowly and require you to give your loaf 2 rises will create different results, so you m ay want to choose a recipe calling for either active-dry yeast or instant yeast.
