Hi Mary! 1. We haven't tested is, we've used flax meal in our test kitchen, so we'd recommend checking with the manufacturer of the specific brand of protein powder you have for substitution recommendations.
2. We haven't tested that either, but a quick Google search recommends using 3 tablespoons per egg. We'd suggest doing this in recipes that have other leaveners in them (baking powder, baking soda, yeast) and aren't relying on eggs as their source of leavener, and call for 3 or fewer eggs in the recipe for best results.
