You can also use AF or "aquafaba" (chickpea liquid from the can or home-cooked) to replace the eggs. The ratio is: 1 lg. egg = 3 Tbls aquafaba. Replacing one egg white = 2 Tbls of aquafaba.
I've been using AF successfully for years. One fact about it that I have learned is that leftover meringue can be re-whipped. All liquid re-incorporates. Can't do that with real eggs :-)
