I've heard that if you're baking and want to save eggs: 1T oil(*) / 2T water / 2t baking powder, mixed separately, will sub for an egg in just about anything. (*) what oil depends on what you're making; generally use something neutral.
Have been fortunate enough to keep a good supply of eggs, even in these crazy times, but if they run out I might have to try it!
