Bread flour is our preferred choice for the Pillowy White Bread recipe because it ensures a high rise and nice structure on the inside of the loaf. That being said, if all-purpose flour is all you have on hand, go ahead and make a one-for-one swap. The bread might not rise quite as much, but it'll still be tender and delicious.
