I came across your blog by accident when ordering Vietnamese Cinnamon. I am gluten and lactose intolerant. I love cheese and have found it is okay to uses a cheese that is aged over 9 months. The older the better, but apparently Wegmans sells a 9 month old sharp cheder that I can eat. Not nearly as good or as sharp as Cabot's Sharp and Seriously Sharp Cheddar which does state on the packaging Lactose free.
Having said that about aged cheese, what do you list that is aged over 9 months? I do know that imported Gouda is okay for me to eat and have wondered about its meltability.
