Hi Barbara, we totally agree, these sourdough crumpets are yummy and well worth the practice it may take to perfect the process. I find making sure the crumpets are well-cooked on the first side makes flipping easier. Look for lots of bubbles on the surface and the edges beginning to pull away from the ring just a bit.
