Hi Erica, yes, because sourdough discard can vary a lot in consistency (from quite thin and wet to very thick and pasty/gloppy), adding a little extra water may be necessary to get the crumpets to rise and be airy in texture. Look for the consistency of the crumpet batter to be similar to a thick pancake batter.
