Hi Kristen, you can certainly make crumpets with ripe sourdough starter, but you may notice you get a little more flavor and perhaps even a bit more airiness when you use sourdough discard that's been in your fridge for a week or more because it's likely to be a bit more acidic (which is what activates the baking soda in this recipe).
