These crumpets were a wonderful way to use that discarded starter that I usually throw away. I've tried other "discarded starter" recipes that still required you to set it up the night before or needed rising time. These were easy, easy, easy! Also, it was nice to have a recipe that made the right amount for my husband and me for one meal. Yes, we had two each, and they were delicious with butter and strawberry jam.
