I agree that, as written, the recipe will not produce the crumpets we grew up on in Canada, but it still produces something that is tasty, easy and quick to make. We experimented with lower heat and used a cover instead of flipping the crumpets and did get closer to the nooky-crannie-y goodness of the crumpet of our youth.
