You mean people might actually throw away usable sourdough starter ? :-)
Even easier than this recipe is to make a scallion bread, by spooning the discard into a preheated non-stick fry pan, topping with a sliced scallion, some zatar (or other dry seasoning), kosher salt and sesame seeds. After about 3 minutes, drizzle with a little olive oil, flip over for another 3 minutes (or whatever it takes to make it toasty brown), remove from the pan, let cool briefly, cut into segments and eat-- I mean serve, if you are willing to share. I first saw this from a YouTube segment https://youtu.be/vVx2oFFptG0 and have used it many times since when feeding my starter.
Would suggest KA baking guru's play with it a bit, and add it to the list of uses for discard starter.
