These are not traditional English crumpets. These are just US muffins since you have to split them to get to the lovely nooks and crannies inside to load with butter and the preserve of your choice.
When griddled the bottoms should be dense while the top has the openings left from the bubbles inside rising to the top and popping, leaving direct access to the interior nooks and crannies without any need to split them. If the bubbles don't break through to the crust your mixture is too thick.
