Hi Maria. The wheat we use to mill our flours may be cross bred with Semi Dwarf wheat. Semi-dwarf wheat has been hybridized using traditional breeding methods to be shorter and stronger than non-hybridized wheat, giving it the advantage of not being blown over in the wind, which make the kernels unusable. Traditionally cross-bred wheat like this is widely grown, including among our own farmers. We can guarantee that it's not genetically engineered as our flours are non GMO, never bleached and never bromated or enriched.
