Being French and living there, I can't use the white wheat flour, but it is very pleasing to see that companies support and promote good farming practices.
And thanks for the blog that allowed me to improve my baking and discover American cakes and pies and pastries, quite different from French ones but nonetheless delicious.
The only downside being I just needed a Kitchen Aid for creaming butter :-) and they are insanely expensive in France, imagine, $600 each and this is not for the professional one !
